Rabbet cut for canoe gunwale

Hello,

I'm working on a canoe. The outer gunwale has a rabbet cut or kerf that is not 90 degrees. You can't see this cut on a canoe because it is facing inward to cover up the edge of the planking and canvas. I'd like to use hand tools to cut a 98degree kerf the length of the 18' piece. I don't know if I'm using the terms kerf or rabbet correctly. Is there a way to set up a rabbet plane to cut at anything other than a 90 degree angle?
