I posted about this tool awhile back, but never got around to showing how fast it is. Lathe is running at 650rpm. I try to lean over the camera not to get in the way, but get better leverage holding the handle against my hip the more it goes off the tool rest:


The video shows it in real time. Finished products:

Raise the tool rest up a bit and you won't be fighting it nearly as much as you are. When hollowing, the cutter should always be above center. The reason that the tool is grabbing and jerking the cutter down is because the cutter is below center and is digging into the wood. Another problem that you might be having is not having the cutter guard set properly. It should be adjusted to get fine shavings. Properladjusted, you should be able to get smooth clean cuts.

What is that rig that you have attached to the tool shaft?
