You will likely get all three answers, but, to throw in my 2 cents, I usually go with II. II is water resistant and III, if I remember correctly, is water proof. For inside projects I think you can be satisfied with water resistant. Also a bit less expensive.
On my laminated bench top I used titebond II because I didn't want to leave anything to chance. normally it seems like when I need wood glue (indoor or waterproof) its because I ran out in the middle of a project, so unless I want to drive for 45 minutes I'm limited to the Elmer's wood glue or Elmer's wood glue max that is sold locally. It has worked just fine for my projects.
