The way I make those racks is to line up the bottoms of the openings either cross hatch, half circles, or circles. The front and back are about 6" apart. The bottle sits at enough angle. From 3½" to 4" works for most all standard bottles (750 ml).
For your application, make the front and back an assembled unit. You only need 4 or 6 stretchers to keep it together and the distance from each other. Set it into the opening. You can put a small screws with just a yankee, or by hand. It doesn't take much to keep it in place.
