...would you use for "sanding" between coats of stain? I just want to make sure I have a very smooth finish and remove any raised grain.

Sanding between coats of stain?

I have never done this. Seems like it would lead to variation in the color. Any sanding I have done has been between coats of sealer and for that I use the red pad.

Use the white Scotchbrite - that's the finest "grit" and what I use on my pens after 400 to do the final "sanding."

Obviously the white won't affect the color of your stain.
