A question for you experts out there. I have some cherry that is heartwood on the good side and almost all sapwood on the reverse. I want to know if I should use it for face frames or part of raised panel doors. Will the sapwood or heartwood expand or contract at different rates once it is dimensioned , assembed and finished?

I believe so.
I would never use it for frames, you might get away with it
on a panel that's free to float in a frame, but I wouldn't risk it.
I get a lot of cherry like that and I usually save it for shelving,
or somewhere it doesn't matter.
Besides, it'll never look the same, and when I use cherry,
it's usually for something that's going to be pretty nice.
