Just a note , maybe you know this already or know another way.
This was fresh cut Holly, I logged it to length and let it sit in the garage unsealed and standing on end for 4 months. I don't know if any of this had anything to do with it spalting, but that's what I did. And Viola, Spalted Holly!

I was surprised when I turned it and saw the spalt.

Toller, It was white when I cut it, then it spalted, you know,Fungamoidus Spaltimus, That's Greek......lol
