I used to seal drawers in dressers etc. with oil based polyurethane till I was advised that the odor may linger for a very long time. So I switched to Zinsser SealCoat either thinned or straight.

I have some water based outdoor poly not being used for anything. Would there be any issues if I used this for sealing? Thanks.

There is nothing wrong with using the water based poly on the drawers. You can also use the sealcoat under the poly to build the finish quicker. I normally finish the inside of the drawers with pre-cat lacquer and set them in from of a fan to dry the offgas faster. It may still have some odor when I deliver however I've never had a customer complain. I've been working around the stuff so long I can't smell it anymore.
