I want to find a pair of rails that I can use vertically, to move a work table up and out of my way.

Where would I find such things? I do not even know what they're called.

Doesn't sound like a good idea. But I will tune in to see what others have to say. How about building a good bench and folding it up against a wall? Casters?

What can I use that will allow a table to fold 'downward,' and not upward?

That is, when it's flat against the wall - it's at a lower height than when it's extended.

How deep is the table?

Folding this down is the way to go. The weight may be a challenge to lift.

If not too deep, then look up folding shelf hardware, one example.
