Eng grain or face grain?
Oil will be absorbed more in end grain than face grain.
These are all dense woods. In face grain the oil will not go deep in these woods.
Oil based poly can be used over oil, but make sure there is no way in the oil mixture which will impact adhesion.
If you want to highlight the grain, I would use Zinsser SealCoat which is a dewaxed shellac. Goes on very easy, fast drying and can be top coated with water or oil based finishes.
