I presume you are talking about orbital sanding?
Woods generally get darker from UV exposure.
If you are speaking of the lightening of wood you sand, you have to sand anything you start consistently.
Unless you apply a UV resistant finish, it will return to the color it was if you liked it better.

you can't

unless you are showing shadows....you can turn shadows off

turn shadows off under view/ shadows

you might also consider checking hidden line mode under view/face style/ hidden line.... the face darkening will go away there

you might have to change back ground color but its going to be the same color as the model then.
