The most popular mechanism that is made by Chef's Specialties, has a stainless steel grinder assy with an aluminum shaft, steel screws, and a couple other plated steel parts. This works great for pepper, but the salt would be corrosive to the non-stainless parts. The grinder assy made for sea salt or coarse kosher salt is a combination of plastic housing with ceramic innards, commonly called a 'crush grinder'. There is also a polycarbonate grinder assy on the market. It is supposed to work for salt or pepper. I bought one to see what it looks like up close but haven't used it yet. It looks a little cheesy to me.
