Gentlemen:

Installing some new double hung wood frame windows, looking to finish the inside with deft satin lacquer. There could be some slight moisture in the winter (very cold climate)....I really don't want to go the poly way. Will it work? and how many coats will i need? Appreciate any info you can share.

Deft really isn't a good idea. Moisture tends to cause it to peel and chip. Here are some other options if you don't want poly. You might try Superdeck natural if you want the oiled look. Or ask Sherwin Williams if they have an exterior grade laquer that is brushable. Or, there is a product called Crystalac that is available at Mcfeely's. I use Crystalac almost exlusively for cabinets, exterior doors and furniture. They have an exterior that works really well.
