I've noticed that it can take a full 24 hours for the finish to be sandable wehn the first two to three coats are applied but as the finish builds up it dries much faster.

I sand up to 180, first coat, let sit 24 hours + at 220, second coat, let sit 24 hours then sand at 220, third coat, ready to sand again in 12 hours and sand at 320, fourth coat, ready to sand in four to five hours and I'll sand that 320 and then 400. I might apply a fifth coat and let it dry with some steel wool to knock down any dust which may have settled.

Why does the finish dry so fast? Is it because its done soaking into the wood and setting?
