I have Oak, Maple, and Walnut with which to build a small project featuring dovetail joinery. In people's experiences what would be a nicer combination of wood? Oak/Maple, Oak/Walnut, Maple/Walnut? I have very little experience working with these so would be helpful to hear some opinions.

Although I think any of those combinations will provide interesting contrasts between the different elements of a project the walnut/maple sounds best to me.

That's just my opinion.

The oak and walnut are open grain. The Maple is closed. I've seen all combinations used, but prefer when similar grain types are uses. Walnut and Hickory/Pecan are a favorite of mine.
