I an old school drafting table guy. I would basically do what Steve said, starting with a known measurement and proportion the rest of the chair from that. Then you can tweak it.

As Steve said, you want to get to full scale drawings, once you have that, build a mock up using scrap wood -- no joinery, just screwed together sturdy enough to sit in, and see what the ergonomics are like.

From there, I would make story sticks to reference the joinery.
