Any modern finish is safe to eat off of once it has fully cured (about a month). Best finish would depend on the color of the wood and what means you have to apply the finish. If the wood is light and you have the means of spraying then you could use a water based polyurethane. If you don't have the means of spraying you would use a wipe on polyurethane. It's available in both water based and oil based. The oil based poly isn't very suited for light colored wood as it yellows as it ages. A harder more scratch and chemical resistant finish would be a conversion varnish but it needs to be sprayed. It's also a lot harder to get off if the day comes you want to refinish. A middle ground would be a pre-catalyzed lacquer. It needs to be sprayed also but is a lot less work and trouble to apply then any of them.
