Joinery/Wood Movement Advice Needed

I'm building myself a moxon style vice + mini bench from some scrap maple and two pieces of threaded rod. The boards I have are 20mm thick so to get a thicker top instead of edge jointing Im going to face joint the boards, which I have never done before. My question is what should I expect interms of wood movement and what would be the best way to attach the support aprons to the top?
