Rough cut lumber finish

Hi everybody,
I recently purchased some rough cut African mahogany wood. I believe it is called sipon. Anyway, I plan on using these as open shelving in our kitchen remodel and am wondering about what to use for a finish.
I really want them to keep the roughness as this is the rustic look we are going for but at the same time I realize over time it will be a PIA just to try and dust them. So my question is what finish should I use and should I lightly sand down the tops just enough for easier upkeep?

With it being rough you will have a problem with dust no matter what you use for a finish. You might as well use an oil finish such as Watco and when the dust gets to you apply another coat. It will darken the dust to match.
