drying/finishing oak disks

Hello all, I have several disks of fresh cut pin oak that I want to make into table tops... Honestly, I have no idea where to start. from browsing, it sounds like even if i dry them, I should probably wax them to prevent cracking before they dry, or if I seal them, do they still need to dry at all? They will also be very rough cut, so should the be sanded first, and how thoroughly? And in the end, looking for recommendations on how to finish them well, what types of product to use, etc.
