I was just about to say "wet". One of the things I learned when I started making pepper mills was that if I had shavings flying over my shoulder, or even ribbons, the wood wasn't dry enough. But it's great fun for practice.

Green wood as mentioned sure cuts nice. Green black ash or a birch can be fun and cut nice.
