sawing logs for turning

I'm am going to be cutting some maple logs into lumber in a few weeks and was looking at cutting some of it into 6 x 6's for turning some large decorative posts. I then planned to have it kiln dried. Will this work for turning? I have been reading a lot posts about turning green logs, my thought was starting with dry wood was better. I'm new with turning so not real sure the best way to handle large pieces.
