picked up a chunk of wood today...

I bought this block of spalted maple burl. Its freshly cut and sealed, but I was wondering whens the best time to turn this? I dont want to mess it up because I didnt wait or something.

The only reason to wait is to plan to make the most of the special piece of wood.
It would be good to be able to use one of the coring systems to get the most of the log. Maybe you know a turner who has one and would help use it?
Burl keeps a bit more stable than non burl but it will check. You have a few weeks if it's sealed. Keeping it in a bag in the freezer will buy several weeks or more.
Sounds like you're itching to turn.
