Most basic turning question

So say I want to make a bowl. I have a log laying in my yard. I can't just cut into slices and venter them up on the lathe right? The center of the tree is not going to be the center of the bowl correct?
So the question is how to go from log to blank.
Is that clear. If I'm being an idiot I'll go by a book.

Most bowls are made by taking the log and cutting in half lengthwise. Then cut a length of the 1/2 log that is close to the thickness of said 1/2 log. Round that up on your bandsaw and then mount on the lathe and turn.

That bowl was perfect right up until that last cut...
