Finial Blanks

Again I'm talking about cutting turning blanks from green logs. I have several outdoor fence posts (3-1/2"x3-1/2" Pressure Treated) that I want to make some finials for. They will be black locust and treated with an exterior stain. Not much grain shows through that, so grain direction is not important. I'm guessing I would cut the blank and then turn it as if it were a spindle. The length being with the grain of the log. The question is: would you keep the center of the log out of the blank or would it it be OK to include it. Most posts I've seen have the center of the log in them.
