I am going with the general consensus-rip it apart, run the boards through a jointer (which a buddy has), and do it right! I'll post pics when she's done, thanks for all the help fellas!!

Just saying, but if it was me, based on how you mounted the top, I would clean up the joints, round the edges on each board and leave the boards with a slight gap in-between them.
