Dining room table top suggestions?

I want to build a dining room table to fit 6 to 8 people. We have two little ones so it's a guarantee that the table top will take a beating over the next 8-10 years.

I found a farm style table plans, which look relatively easy to follow. It calls for using doug fir for the top; which I'm not opposed to (or even redwood). If I use pocket screws to hold the boards together, will I have issues in the future with wood expansion?

First off welcome, the pocket screws will hold the boards together, as long as nothing is preventing their movement the top will move with no problems.

Boards expand more across their width than along their length so you can not fasten them rigidly with the boards running across one another. Special methods are used to fasten the completed top to the base of the table, several methods are shown here:

First off all. Dry the wood inside the house until its reach 5-8 %
The boards will twist and bend when drying and you dont want that after you are finish.
Then use a planner and thickness planner. I have seen many indoor old-style tables fantastic when finish and terrible after 4 months.
