Question Mesquite log and newbe

I am fairly new to woodworking and I need input from woodworkers experienced with Chilean mesquite.
1. Is this wood suitable for making an end grain chopping block?
2. How long should I let me log cure before cutting it into boards and turning blocks?
3. Any other advise for someone converting a log to milled lumber for the first time?
