What paint should I use?
Just wondering what paint I should be using on the exterior of a plywood boat I am planning to build.

There is paint made especially for boats. The best you could use is a marine epoxy. https://www.westmarine.com/boat-paint-solvents

Epoxy is a great coating, but breaks down in the sun if it's not protected. Here's an article from West Systems epoxy about what to coat epoxy with for sun protection.
