Waiting time and Finish for pine table.

I recently built a kitchen table, the table top is made from pine 2x8s. This is one of my first major woodworking projects, so lacking the tools, and the time (built it while my wife was on vacation as a surprise), i did not let the wood "settle" after buying it from the lumber yard, bought it and built it the next day. The top is held together by pocket screws and has started to warp just slightly, so that after sanding it flat, i can start to feel the edges of the boards again.

Anyways, my thought is to wait for a while for the wood to finish moving, then sand it flat again, use wood filler in the small seams and cracks, and then finish it with a salad bowl finish. So my question is, how long should i wait before sanding it flat again?

Unless you were using pressure treated wood you shouldn't need to let the wood dry. More than likely the culprit was the pocket screws. It tends to draw up the wood more on one side than the other. We also don't know if you jointed and straightened the wood prior to the glue up. What was needed was well fitted joints and bar or pipe clamps on both sides of the top during the glue up. Also if after the top was glued up it was laid on a flat surface where air could only get to one side this could have caused the warp. A table top you have to put sticks under the wood so the humidity in the air can get to both sides equally.
