I've never used it for cutting boards myself, but it's still fairly hard compared to other woods.

I'd say go for it! It may be soft maple but the end grain is still pretty hard, especially if it's for home use.
Use that wood

Soft Maple does not have much of a grain pattern, even on the face. The end grain would be very boring and would deteriorate quickly. Rock Maple would be a much better choice for durability and look.

I've used soft AND hard maple.... Both work fine....
