I've set the project aside for a while, but plan to work on it this coming weekend. I am going with the over-sized dowel plan. Thanks for all of the ideas.

UPDATE: I clamped some sacrificial pieces over the dowels with the tear out. Then, I re-drilled through them for larger dowels (5/8"). Seems to have worked well & did get rid of the tear out damage from the first go round. Now, to cut & flush sand the dowels to a curved surface!! Thanks for all the advice.
