knife handle finish

This is a first for me, but I'm going to handcraft a 2 piece wooden knife handle for a knife I'm making for my dad. I've heard about using epoxy to secure it, but I'm not clear if i should only use it to secure it to the tang, or all over it. I am going to use Connector screws to hold it through the handle, but wasn't sure whether to use epoxy or polyurethane. I want it shiny and smooth. Oh, should i brush it on or dip it in?

Brush will leave bubbles.
Dipping it will eliminate most of them, but it's still necessary to take a propane torch or a lighter with a good flame and wave the flame over the bubbles (not hard on them) to pop them. You wait about 1/2 hour and the bubbles will mostly surface and pop on their own. but some need help. Go back after it again after an hour and hit them again. It can take 3 or 4 times before the surface starts to tack up and it can't be done anymore.
