Kitchen island advice needed.

I?m pretty new to kitchen surface finishes. I?m finishing up an island top with hard maple tomorrow and the person wants it stained a dark walnut color by Minwax. Any recommendations for the protective coat? I usually use 7-8 coats of wipe on poly for other tops.

imho maple does not accept stains well. I use 3 coats of brush on ploy, sanding between coats.

Maple indeed doesn?t stain very well. I suggest using gel stain instead of regular stain. Easier to apply and manage.
If possible, apply a coat of tinted shellac (many dyes are available for that) to add more depth to the color.
As for finishing, top it with a few coats of something like Arm-R-Seal. Or use the water based High Performence top coat from General Finishes. It can be applied over oil based stain if you wait enough. Several coats are recommended.

If it's not to late maple is a wood prone to go blotchy when stained. It's recommended on maple to use a wood conditioner prior to staining. An oil based poly isn't a bad finish to use. A conversion varnish would be better but is harder to touch up if damaged.
