joining 8/4 walnut boards for tabletop

Hi, im considering joining some 8/4 walnut boards to make a 84"x28" bench top/table top. The easy part is glueing them up and running the whole panel through the sander, my question is, has anybody used that 2 part stuff that you pour on and level it out and then remove the bubbles with a torch? I cant remember the name of the stuff but is the stuff durable? How easily can it be recoated down the road if needed? I got the idea after seeing a huge curly/figured walnut bartop done up with this stuff.

Aardvark uses a product I believe it's called invirotech or something like that.
It's suppose to be durable. I've never used it before. It comes in high gloss and it has that plasticky look. I think he rubs it down to a satin but not really sure. Ill let him chime in.
