Butternut

This is my first attempt working with Butternut (i have turned some bowels) The question is why is the glue (Elmer's ) not setting up (waited 3 hours still wet) and the bottom that was not wiped clean turned purple?

I would say the glue is old and if you just bought it the glue still could be old. I bought some glue at a hardware store near me and later found out it was three years old. I took it back. I now try to buy glue from a popular online retailer like Rockler. They sell more in a day than others sell in a year or so.
