Blotchy walnut end grain?

Has anyone seen walnut end grain with dark spots like this? They don't sand out.

Thank you! It is the first cutting board I have ever made so I was slightly disappoited to see the dark spots. Luckily they are much less noticable once mineral oil was applied but I was more curious if this was common with walnut. I bought the rough lumber from a man who told me that his father cut down the tree 25 years ago and it was drying in his garage since then.

Then it could be anything...oil splatter...antifreeze...paint who knows. I like how you oriented the sap wood down the middle.

It could be a fungus

Looks like some spalting going on to me. I had to stain the end grain on these Walnut plugs to get them dark enough. I used a Dark Cherry water based stain from General Finishes.
