Default Finishing ceder

I am in the prosess of building my first piece of log funiture and am starting to think about finishing it (still about a week out) I want a clear finish to keep the natural look. I was thinking polyurathane but thought I would ask you folks with the experience first. What would be best to use and how would it best be applied? And should I fist seal it some how? Thanks. Tim
