Is there any major problem using Sprues for trim in my shop, little training aid befor starting Bedroom.

As far as type of wood goes,, No problem at all.
If you are ripping studs, you may have a hard time finding reasonably clear rips or rips with small enough knots so the trim doesn't break at the knot.
Poplar is cheap and may be a good choice, also wormy maple, even yellow pine and white pine.
