It would seems that God made wood to a lot of things. I suppose them old trees need to be able to fight off bacteria, after all if they couldn't dominate certain elements we would be with oxygen.

The butcher block counter is beautiful, the rest of the project looks like it's going well too. Remodeling your own place is fun in the beginning but as it drags on it gets a bit frustrating. I always under estimate how long it will take and how much it costs with home projects.

I found the same thing when I looked into bacteria on cutting boards. Wood is actually better than plastic. Especially bad are plastic boards that have been used and thus have lots of small grooves in the plastic. Bacteira and nasties flourish in those grooves, even after regular washing, and you do have to disinfect to really get them clean. The natural tannins and acids in wood on the other hand do a great job of keeping bacteria counts down, especially woods like oak and walnut, but most hardwoods have these chemicals. The difficult part is convincing the general public of this research.

I agree with the Doug fir opinion, but it looks to me like it's possibly a slice out of a big burl. Which will make it quite dense...
