I've always used titebond 3 on all of mine and they have held up very well so far.

I've successfully used titebond II on the couple I've built. Nothing quite that large, but it should still be a sufficient adhesive.

AndyJ,
Titebond II is my glue of choice. I've built 5 or 6 over the past 14 years(varying sizes from 26" x 84", to 36" x 55", and I do 2" thickness) and I know for a fact that they are all still holding up well, no delams. However, you do not have a lot of time to work with, so you have to be all set up and then work fast. Put enough glue on each piece so it spreads easily and evenly, don't worry about a few drops of glue wasted. Spread fast and work fast. Have your clamps laid out and go to it. Have a few rags handy also. Try to keep the wood off the clamp bars though, or they will stain it black where they touch.

I have used Titebond III for a cutting board I built and this was 21/2 years ago. Still as good as gold. I also ran a 5/16" stainless rod with a bolts, to help keep it together. I recessed the bolts into the edge of the board, going all the way through.

Maybe some help.
