Walnut is very good for strength, especially shock resistence.
That's why it's the wood of choice for gun stocks.

I love the way it looks but don't care for working with it.
I get a finer dust from it and it can stain your hands.
Some people can have a reaction from it.
The wood has open pores so for a slick finish it needs
a filler first. But it sure is pretty!
I find a lot of walnut grown right here in KY, most however are
to small or branchy to get good lumber from.
But every once in a while I find some very cheap.

Personally walnut is my favorite wood to work with.

Why only those two choices? Oak is great in many applications, but is so common it's a bit boring....quartersawn oak on the other hand is pretty neat. Walnut looks great up close and is nice to work with but can look like just plain "dark" wood from across a room.

I like them both but love working with a big variety.
